Base notes

Base notes are often the flavor that lingers in your mouth as you finish a dish. They smell and taste warm, toasty, smoky, sometimes robust, and linger longer on the tongue. They form the base and balance out the flavor of the main ingredient to highlight the top and middle notes.

Middle notes

Middle notes contain hints of brightness and can mellow out into something slightly more neutral. They provide structure and balance to the dish. In fact, almost every dish contains at least one spice in this category often in the form of ground white or black pepper. Middle notes shine best when combined with top and base note accents in the form of ginger or some other warming spice.

Top notes

These are the aromas that first hit your senses of smell and taste and stay at the top of those senses while you eat. They enhance meats and complement root vegetables: carrots, potatoes, turnips, sweet potatoes, etc. Top notes are often rich and textured, zingy and add unmistakable flavor to a spice rub or marinade.
